If I had to consolidate down to 'One Watch' ...
this one would work. How about you?
I might go with white gold.

I already use this as my "one watch" when I'm on the road for a couple months at a time, so I know it does the job fine. The "hobby" part of this hobby - the bit about collecting a bunch of cool watches and rotating them day to day - has very little to do with the simple function of telling time. If someone were to take away the fun part of collecting different movements, brands, design styles, eras, and tell me just to pick one watch for all needs, then it's all about pragmatic and affordable.
Too many watches, not enough wrists.

Not sure. I'll have to give this some thought. My "only watch" would have to:
-be stainless steel, or steel and gold,
-have a simple timer (elapsed-time bezel, or chronograph),
-have at least a true GMT hand (or world time would be acceptable)
(could have a fixed, smooth bezel IF it had a GMT hand and chrono functions)
-have at least 100M WR
-40mm max
-be essentially a sports watch that looks like a dress watch.
-European or Japanese, doesn't matter.
Not an easy task, and I don't own one.

beside the GMT hand and its 42mm size, i think we can share the same watch Sherry hahaha...
that solid G-Shock that i post almost fill your requirement..
i agree with yo that it is not and easy task... i even have difficulties to stay with one watch just for a day/ a week!
