Hate is a form of flattery and they were outstanding as you know the Egg gets very hot temperatures that a gas grill just can't achieve the tips were cut and marinated in veriveri for 6 hours and just peppers and onions on a bamboo skewer took about 8 minutes total to cook the charring brings out the sweetness and had lunches for 3 days after yumm..

A variation of Canh; vietnamese pork meatball and watercress soup. This is a favourite around here right now. This was a quickie version using chicken stock versus the way we normally do it, which is with simmered pork bone broth.

Last years Duck a Million Ways may have become a tradition. Christmas was duck breast and cherry brandy sauce, made with fresh cherries warming spices and Armagnac, and ham with figs, honey and bourbon. I broke whole ducks down like last year and after a 48 hour cure the legs are confitting in the oven as I type. Yesterday we had duck and ham clubhouse sammys for lunch and tonight duck pho(ish) made with a 12 hour broth of the roasted carcasses and the last of the roasted duck breasts.
