'morning, IWL. Finished the day yesterday with the Photic and lamb.
Sous vide a lamb leg for 24hrs @ 132F, then finished over hardwood. Delicious, perfect med rare. We get a lamb each year and this was the last large cut from last year's lamb - we get our delivery next month, good timingThey always look terrible coming out of the water bath.
But look (and taste) great after some searing.
