Old but Crafty
Noise Canceling Headphones
Do you have a set of them? I'm going on a long air trip in a couple of months so I thought I'd look into them.
Amazon had a good deal on a pair of Sennheiser traveling headphones so I ordered them They fold up, have a nice travel case and one of those two plug adapter dongles so you can use them with the airline sound system. The noise canceling circuitry is battery powered and runs for about 50 hours on a single AAA battery.
Know what? They work. If you are listening to nothing the noise drops off appreciably. If listening to music the sound is far better with the attenuation switched on - more bass, more clarity.

My Bose noise canceling headphones must be 8 yrs old. They look ropey as hell and the photos below look even worse than I thought.
But they still work, the rechargeable battery unit still hold a decent charge. Fantastic longevity is worth the initial investment.

I fly a lot but have never wanted to justify the space of over-ear headphones. I have a few pairs of really nice in-ear ones that do a good enough job for me on planes, and take up 5% of the space and weight. The active noise cancellation is something I've never missed, even on smaller planes that are noisier.
I do appreciate the better sound you get from over-ear headphones, and have a nice pair of Sennheiser reference headphones that I wear around the house in the summer while I cut the lawn, etc. They have excellent sound without making everything sound like I'm listening in a swamp from the bottom of a jar of peanut butter like the Beats by Dre fashion accessories you see a lot of lately.
It is now my duty to completely drain you.

I'm not a fan, but I haven't tried any since the one of the earlier Bose. For some reason when I had them on they made me slightly nauseous.

Random guy
I recently bought a pair of Master and Dynamic over ear headphones for my wife. They have excellent sound and the over ear feature reduces noise.

I always go with in-ear headphones with "passive" noise cancellation; i.e. a really good fit that blocks the noise. Klipsch S4is or Monster Turbines are my go to headphones. The Klipsch are lighter and more comfortable if you fall asleep in them (also mine are the Active model, so they're water resistant), but the Turbines' metal construction gives a better bass. But you can't really move around with them in, since they're so heavy they fall out easily. Same thing with sleeping, they fall out of your ears.

The Dude Abides
The Bose are really nice, but IMHO a bit overpriced.
I love my Sennheisers. Have over the ear ones, noise cancelling ones, behind the neck wireless ones, and shopping for a part of on the ear ones now.
