Music
On a different day I might choose different records, but these would do:
- Bach - Cello Suite, No. 1
- Beethoven - String Quartet, Op. 131
- Miles Davis - 'Round About Midnight
- Stan Getz - Blood Count
- Jimi Hendrix - Voodoo Chile
- Kroke - Ajde Jano
- Thelonious Monk - In Walked Bud
- François Rabbath - Ma Mère, Baidja
Book
With Shakespeare provided, I might not need anything else, but maybe something light and frothy - a PG Wodehouse compendium. I wouldn't have any use for the Bible so might try to swap it for something else.

We've always said albums not single tracks and it was five same as Raza (and greatest hits don't count). My tops are pretty easy but rounding out the five sometimes proves difficult. Anyway, here is my attempt at 5:
1. "Closing Time" - Tom Waits
2. "The Earth Sings Mi Fa Mi" - The Receiving End Of Sirens"
3. "Zeppelin (I or IV, can't decide)" - Led Zeppelin
4. "In Keeping Secrets of Silent Earth: 3" - Coheed & Cambria
5. An album that has Rachmaninoff's piano concerto 2 (and preferably something else too), performed by Rachmaninoff or Arthur Rubinstein
For a book, either Atlas Shrugged or The Fountainhead

Could I trade Shakespeare's works for something enjoyable to read?
It is now my duty to completely drain you.

The Dude Abides
Anything Sinatra between 1954-1976
Anything John Coltrane
Anything from Johnny Hartman
Most anything from Webb Wilder
Everything from Brian Setzer and the BSO.
Not eight, but more than enough good music to last me on an island for a while.

Interesting selection, I'm surprised how much our tastes overlap. My selection would almost certainly have some Stevie Wonder, Johnny Cash and Rolling Stones but possibly not the same songs.
I will return with my choices...
