Are these gonna be true two-strap NATOs or single-strap Zulus? If the former, 3 buckle or 5 buckle?

Love this idea!
And for the record, the only watches I own that I wear on a NATO have 20mm lugs.
Also, do you do NATO straps in 12" length that Maratac does or the more common 11" that most people seem to do?

Raza, all the newest straps we added are 12" length. Check the "New Arrivals" collection on our site for the 12's. We have had high demand for these so we are probably going to do all our future stock in this length.

Probably a one-piece NATO unless there is significant demand for something else.

Doesn't matter what the keeper is made from I suppose. But I just prefer 1 piece, which is traditionally called RAF style

This is a standard NATO:
