Good question Alan. Plongee in french translates to "diving" or "immersion" in english which could be where the reference comes from, but these are watch hands we are talking about...these Megamatics definitely have diving chops.
Crepas is headquartered in Spain however, but the trip to France is quite short as you know. I'm completely out on a limb here... I definitely prefer the Big Hands on this one due to the inspiration provided by the Omega prototype that this one is based on.

Well, that style is usually called ‘Plongeur’, so I was wondering why they’d come up with a variation on the name.

"faire de la plongée" means to go scuba diving. Plongeur is a person who goes scuba diving. It's also a dishwasher.
Too many watches, not enough wrists.
